I love Rice Cake or in Philppines, it is commonly called as “Puto.” Traditionally, this Filipino native delicasy is cooked by steaming method. Since Rice is an important staple food for Filipino people, Rice is the main ingredient in this dish.

Puto is usually eaten as a dessert, but can also be eaten for breakfast dipped into or paired with a cup of hot coffee or hot chocolate. It tastes mostly like rice but slightly sweeter.

Puto is very easy to cook. Just prepare 2 cups of rice soaked in water over night. Place the puree soaked rice inside a heavy duty blender until it becomes fine. There are ready made rice powder in the market too! Pour the fine blended rice in a bowl then add sugar and 2 tsp of baking powder. Just mix it well and set aside.

Beat egg whites until stiff. Add 2 tablespoons sugar to keep the air in the beaten egg whites. Fold the egg whites into the beaten rice batter and pour into muffin pans. Steam for about 20 minutes or until done.

Spread butter on the top of your steamed rice cake until it melts. You can serve this dish with grated coconut or with a filipino dish called “Dinuguan”( if you are familiar with it!

So today, i will be sharing you how to make Banana Pancakes

Ingredients:

1 1/2 cups all purpose flour

3 tbs Sugar

1 tbs Baking Powder

1/4 tsp salt

1/9 tsp ground nutmeg

2 large eggs

1 1/4 cup milk

1/2 tsp vanilla extract

3 to 4 medium bananas peeled and cut into about 1/4 inch thick slices.

maple syrp and chopped pecans

butter

Just mix the flour sugar, salt, nutmeg in a large bowl. Melt butter in a small saucepan and set aside. Whisk eggs in a medium bowl add milk, vanilla extract, and 3 tbs of melted butter. Whsik everything until well mixed. Pour the mixture into the flour mixture, stir until batter is smooth and thick.

Heat the remaining 2tbs of melted butter in a large frying fan ove medium heat. Add banana slices and cook both sides until caramelized golden brown color, about 3-4 minutes per side. Stir half into the batter. Reserve remaining slices for the toppings.

Heat 1tbs oil in a large dkillet or griddle over medium heat. Measure 1/2 vup batter per pancake and pour into a pan or gridle when oil is hot. Cooked until bubbles appear around the pancake edges. Flip and cook until brown on other side. Remove from pan, setting aside in warm oven. Cartefully wipe out pan or griddle and add more oil if necessary. Repeat the procedure to make your desired number of pancakes.
